You’d be surprised how much flack a person gets just because they happen to mention they’re going to make a hot tomato pie almost from scratch. And it’s a crying shame too. There you are, working your fingers to the bone…day in and day out, pushing the boulder uphill, only to be mocked outright for partaking in one of life’s simple pleasures.

Okay, none of that actually happened, except for the part where Alpha Male got a bit uppity about the whole thing, on Facebook no less, and said ‘it’s not that good, trust me haha.’

Um.

What?

“It’s not that good, trust me?!” Yeah I don’t think so, pal.

And Anna? Trust me — you should be on the edge of your seat. It’s that good.

Jody? Cooking With Buff Todd® would be censored after one episode, let’s not kid ourselves.

Paula? You have no idea what you’re missing. But in your defense, neither did I the first time the dish was put in front of me by Cute Redhead’s mom (aka Mother Jane) (who could cook all of us under the table, trust me).

Carl, I knew you’d dig the whole idea, so here’s to you, Master Gardener.

And lastly, Juan? I want a full report on you cooking one of these for yourself because the recipe just so happens to be one of the easiest reasons to justify planting vegetable garden in the first place, and takes no more than this:

a frozen pie crust (defrosted at room temperature for about ten minutes, for the novices among you)…

a single layer or two (but no more) of your garden’s crown jewels…

a bit of olive oil drizzled (and I mean drizzled, don’t get crazy)…

some salt and pepper, and…

some mozzarella cheese.

Pop that sucker in a 400˚ oven for as long is it takes to come out looking like this:

And then…

when Recalcitrant Teenager emerges from his den of iniquity whining for something to eat (he can muster enough attitude to smart off but not enough to manage a sandwich, how shocking), which he did…you whine right back with something like, “oh pumpkin buddy sweetheart child of mine: yeah sucks to be you. I just ate the whole thing.”

Which I did too.
